KIMCHI STIR FRY RECIPE
I have been all about kimchi lately! I tried it because of all the amazing health benefits, mainly the probiotics. However, I must admit it takes a bit to get used to but after trying it a few times I really started to love it! You can read more about the benefits of kimchi here. I am also all about something quick and easy to whip up after putting the baby down. I must say I don’t cook NEARLY as much as I used to pre-baby. We have an awesome friend who lives with us and is an amazing cook, so we have been quite spoiled. But when I do cook I really do love it, and I have always been very into researching and experimenting with healthy recipes.
This is one of the recipes I found when I wanted to integrate kimchi into my diet. I simplified it and made just a couple changes and this is what I came up with, enjoy!
Serving size: 1 (my husband is not a fan of kimchi lol)
Chicken breast (I use one single breast)
2 teaspoons sesame oil
1 teaspoon soy sauce
1 cup kimchi
1/2 cup artichoke hearts
1 teaspoon garlic powder
1 teaspoon chili powder
1 cup rice
1 tablespoon vegetable oil
Toss the chicken with the sesame oil, soy sauce, chili powder and garlic powder in a bowl and set it aside.
Add vegetable oil to a large skillet and add the kimchi and artichoke hearts. Cook until it Is hot.
Add the chicken to the skillet until it is cooked all the way through.
When it is all done serve with Rice and eat up! Easy as 1, 2, 3... Literally!
